In a war, how are the victories of the battles determined?

For example, let's take the Civil War. There are a ton of battles that occurred. The Confederates won some of them and the Union won some. What determines who wins each separate battle, and how is the outcome of the entire war determined? Does it depend on the number of casualties of the battle and/or battles?
